Processing Method


Our Colombian beans are processed via a method called the washed or wet process. The fruit of the coffee (the cherry) is removed at the very beginning of this process either by high-pressure water jets or with large blenders. The cherry-free beans are then placed in tanks to ferment. When the fermentation process is complete, the beans are laid out to dry and then graded. Perfectly roasted washed beans deliver a bright and delicate acidity, unique fruitiness, balanced sweetness, and a clear aftertaste.
